Make dressing the day before
Combine in a jar:
  • 2/3 c. mayo
  • 1/3 c. sugar
  • ¼ c. cider vinegar

Refrigerate, and shake before pouring over salad
For salad
Chop fairly finely 1 bunch of broccoli.  Cut tough ¼” off bottom of stems and peel if necessary, but use:
  • 2 apples chopped
  • 1/3 c. chopped dried cranberries
  • 2 T. finely chopped onion, or 4 whole scallions

Toss with dressing and serve.  
If you have leftovers, drain as much dressing off as possible to keep it from getting soggy.
