On a sheet pan, toss in ½ c. oil    
  • 2 med. Eggplant peeled and cubed          
  • 2 each red and yellow peppers in a large dice
  • 2 cloves garlic minced

375 degrees, and roast uncovered for 45 min.

Toss with: 
   
  • 1 lb. cooked orzo
  • 1 bunch scallions sliced
  • ½ c. chopped fresh mint
  • 1/3 c. lemon juice
  • 12 oz. crumbled feta
  • 1 c. chopped apple
  • ½ c. Parmesan
  • ½ c. slivered toasted almonds


(I also add 2cups frozen collards, or chopped spin. Or kale thawed and drained well)
