Make dressing the day before:

Whisk together:

  • 2/3 c. Mayo
  • 1/3 c. Sugar
  • 1/4 c. Cider Vinegar

Cover and refrigerate

Salad:

Combine in a large bowl: 

  • 1 bunch of 3 good-sized stalks of brocc which you chop fairly finely, stems too
  • 1/3 c. raisins, dates or dried cranberries which you also chop up a bit more (I used cranb)
  • 2/3 c. chopped unpeeled apple (more or less depending on your taste, I go for more)
  • 3 whole scallions sliced, or 2T. chopped red onion


Toss and serve within several hours; this salad will not hold overnight, it gets very soggy.
It pairs very nicely with chicken salad; the 2 stirred together are especially good

Optional add-ons: crumbled bacon, chopped roasted salted almonds or sunflower seeds.
